How to Make Essential Oils at Home: Complete Beginner's Guide

Making your own essential oils at home comes down to one process, steam distillation, and one decision most guides skip: what size still to run it in. This guide covers both. It walks the full method start to finish, then helps you pick the still that fits the plants you actually have.

Everything here assumes a copper alembic still on a normal kitchen stove. No workshop, no plumbing, no permanent installation.

What steam distillation actually does

Essential oil sits inside the plant in tiny glands. Heat alone would scorch it. Steam distillation works around that by using water vapour as the carrier.

Water in the boiler turns to steam. The steam moves up through the plant material and ruptures those glands, and the oil evaporates into the vapour stream at a temperature well below its own boiling point. That mixed vapour travels through the swan neck into the condenser coil, where cold water surrounding the coil pulls the heat back out. It leaves the still as liquid.

What comes out is two things, not one. Essential oil, which is not water soluble and separates on its own. And hydrosol, the aromatic water that carried it. Hydrosol is a product in its own right, not waste. For several plants it is the more useful of the two.

Why copper

Copper conducts heat about twenty times better than stainless steel, which matters more than it sounds. Even heat means no hot spots on the boiler floor, and hot spots are what scorch delicate plant material and put a burnt note through a whole run. Copper also binds sulphur compounds released during distillation, which is why it has been the traditional material for aromatic work for centuries rather than a stylistic choice.

Which still size do you need

This is the decision that determines what you can actually make, and it is worth getting right before anything else. The limit is not weight, it is volume. Plant material is bulky and cannot be packed tight, so a still fills up long before it gets heavy.

5 Litre

Best for: learning the process, small garden harvests, hydrosols, single herb runs.

Takes roughly a carrier bag of fresh material per run. That is enough for a decent bottle of hydrosol and a visible amount of oil from a generous plant like lavender or peppermint. From a stingy plant like rose, expect hydrosol and very little visible oil.

The honest limit: if you grow a row of lavender rather than a plant or two, you will outgrow this in a season. It is the right first still for learning, and a poor one for production.

5 Gallon

Best for: a real garden harvest, repeat batches, anyone who wants usable quantities of oil rather than a demonstration.

Around four times the working volume of the 5 litre. This is where oil stops being a novelty and starts being something you can bottle, blend and give away. Still sits on a domestic hob and stores in a cupboard.

The honest limit: a full run takes longer and uses more cooling water. If you only ever distil a handful of stems at a time, you will be running it half empty, and a half empty still wastes heat and time.

10 Gallon

Best for: small botanical brands, market sellers, smallholdings, anyone distilling a crop rather than a garden.

Built for volume. If you are selling hydrosol or oil, or working through a lavender field in a short harvest window, this is the size that keeps up.

The honest limit: it needs dedicated space and a serious heat source, and it is not a countertop appliance. Buying this to distil a window box is buying the wrong still.

The short version: pick by how much plant material you can actually get your hands on in one go, not by ambition. A still running at a third full is worse than a smaller still running full.

What else you need

  • A heat source you can turn down. Gas, electric or induction with an adapter. Fine control matters more than power.
  • Cold water for the condenser. Either a bucket you keep topped up with ice, or a slow tap feed. This is the part beginners under plan.
  • A separator or a narrow glass vessel. Oil floats on hydrosol, and a narrow neck makes the layer thick enough to draw off. A pipette does the rest.
  • Dark glass bottles. Amber or cobalt, with a tight cap. Light and air are what degrade oil.
  • A notebook. Weight in, time, temperature, what came out. Without it you cannot repeat a good run.

The method, step by step

1. Harvest at the right moment

Timing changes yield more than any other single factor. As a general rule, harvest on a dry morning after the dew has lifted and before the midday heat drives off the volatiles. For most flowering herbs, cut when roughly half the buds have opened rather than at full bloom.

2. Wilt, if the plant calls for it

Many aromatic plants give more oil after twenty four to forty eight hours of wilting in shade, because removing some water concentrates what is left and reduces the load on the still. Not universal. Citrus peel and a few others are better fresh.

3. Charge the boiler with water

Fill to roughly a third. Enough that it cannot run dry across the full run, never so much that boiling water reaches the plant material above it. A dry boiler is how stills get damaged.

4. Load the plant material loosely

Fill the chamber, but do not compress it. Steam has to find its way through the whole mass evenly. Packing tight creates channels where steam races through gaps and leaves whole pockets of material untouched. This is the single most common beginner mistake and it costs real yield.

5. Seal, and bring it up slowly

Seal the joints, connect the condenser, and start the cooling water before you apply heat. Bring the boiler up gently. You are aiming for a steady drip from the outlet, on the order of one to two drops per second, not a stream. Rushing it pushes plant matter into the condenser and puts a vegetal note through the whole batch.

6. Run it, and watch the outlet

Run times vary widely by plant, from well under an hour for soft leafy material to several hours for woody or resinous plants. The outlet tells you more than the clock. When the distillate runs clear and the aroma thins out, the run is finishing.

7. Separate oil from hydrosol

Let the collected liquid settle. Oil rises and forms a visible layer on top. Draw it off with a pipette into a dark bottle. Keep the hydrosol underneath. It is aromatic water with real uses and it is the majority of what you just made.

8. Clean the still while it is still warm

What yield to actually expect

Be sceptical of any guide that promises you a fixed number of millilitres. Essential oil yield is expressed as a percentage of plant weight, and it varies enormously by species, by variety, by growing conditions, by harvest timing and by how the material was handled before it reached the still.

The spread between plants is not small, it is orders of magnitude. Lavender is a generous plant. Rose is famously not, which is why rose oil costs what it does. Two plants distilled the same way in the same still can differ by a factor of a hundred.

Because of that, the useful question is not "how many millilitres will I get" but "what percentage does this species typically give, and what does that work out to for my batch". Two things worth setting expectations on before your first run. Hydrosol volume will be far larger than oil volume, always. And on a small still with a low yielding plant, you may get no visibly separable oil layer at all on your first attempt. That is normal and it is not a fault in the equipment.

Common mistakes

  • Packing the chamber tight. Costs yield on every run. Loose and even beats full and compressed.
  • Too much heat. A fast boil carries plant matter over and dulls the aroma. Slow is the whole technique.
  • Under cooling the condenser. If the outlet feels hot, you are losing the lightest and most valuable aromatic fractions to the air.
  • Distilling material that sat too long. Volatiles leave. Cut material loses aroma by the day, so distil within a day or two, or wilt deliberately rather than by accident.
  • Throwing away the hydrosol. For several plants it is the better product. It is also most of what you made.
  • Not writing anything down. A brilliant run you cannot reproduce is a one off.

Storing what you made

Essential oil goes into dark glass, filled close to the top so there is little trapped air, capped tight, and kept somewhere cool and dark. Most oils keep for years that way. Citrus oils are the exception and turn faster.

Distilling specific plants

The method above is the same for everything. What changes per plant is harvest timing, whether to wilt, run length and what to expect. These go plant by plant.

Safety

  • Never leave a running still unattended.
  • Never let the boiler run dry. Check the water level on long runs.
  • Ventilate. Concentrated aromatics in a closed kitchen get overwhelming fast.
  • Copper holds heat. Use heat resistant gloves on the lid and swan neck.
  • Keep children and pets out of the room while it is running.
  • Undiluted essential oil is strong stuff. Do not put it on skin neat, and do not take it internally.

Questions people ask

Can I use a moonshine still for essential oils?

A copper alembic works for both. The shape that suits aromatic work, a wide boiler and a gentle swan neck, is the same traditional shape used for spirits. What changes is the process, not the vessel.

Do I need a licence to distil essential oils?

Distilling plant material for essential oils and hydrosols is not the same activity as distilling alcohol, which is separately regulated. Rules differ by country and by state, so check what applies where you live before you start.

How much plant material do I need?

Can I distil dried plant material?

Yes, and for some plants it is preferred. Dried material is more concentrated by weight, so the percentage yield reads higher, though the total oil from a given harvest is usually similar or slightly lower than distilling it fresh.

Why did I get no oil?

Usually one of four things. A low yielding species, too little material, packing too tight, or a run cut short. Hydrosol with no separable oil layer is a normal outcome on small batches and does not mean anything went wrong.

What can I do with hydrosol?

Facial mists, linen sprays, cooking, and as the water phase in soap and cosmetics. It carries the aroma at a gentle strength and needs no dilution.
