Lemon essential oil is liquid sunshine — bright, uplifting, and endlessly versatile. While most commercial lemon oil is produced through cold-pressing on an industrial scale, steam distillation with a copper alembic still offers the home distiller a fascinating alternative. The oil you produce will be subtly different from cold-pressed versions, and in some important ways, actually superior.

This is a project that rewards attention to detail. The yield is modest — citrus oils are concentrated in the peel, and steam must work to coax them out — but the quality of what you produce is exceptional. And there is a particularly delightful bonus that we will explore shortly: steam-distilled lemon oil lacks the phototoxicity that makes cold-pressed lemon oil problematic for skin applications.

Selecting Your Lemons

The foundation of great lemon oil is great lemons, and for distillation purposes, organic and unwaxed is essential. Conventional lemons are typically coated with a food-grade wax after harvesting to extend shelf life and improve appearance. This wax sits directly over the oil glands in the peel and will interfere significantly with your distillation.

Choose large, heavy, deeply coloured lemons. The vivid yellow colour indicates ripe oil glands, and heavier fruits generally have thicker peels with more oil. You will need twenty to twenty-five large lemons for a single distillation run — this sounds like a lot, but remember you are using only the outermost peel.

Preparing the Peel

This is where care truly matters. You want only the outer yellow layer of the peel — the zest — where the essential oil glands reside. The white pith beneath contributes no oil and will add bitterness to your distillate if included.

Use a fine zester or a sharp vegetable peeler to remove the yellow layer in thin strips. Work methodically around each lemon, rotating it as you go. If you are using a peeler and some pith inevitably comes along, take a moment to scrape it away with a knife. This preparation step takes time — allow a good thirty to forty minutes for twenty-five lemons — but it makes a genuine difference to the quality of your finished oil.

Do not discard the peeled lemons. They are still full of juice and work perfectly for cooking, lemonade, or preserving.

Steam Distillation vs Cold-Pressing

It is worth understanding how these two methods differ, because the distinction affects the character and safety of your oil.

Cold-pressing is the commercial standard for citrus oils. It mechanically ruptures the oil glands in the peel and collects the oil directly. The result is vibrant and intensely aromatic but contains furocoumarins — compounds that make the oil phototoxic. Apply cold-pressed lemon oil to your skin and step into sunlight, and you risk serious burns.

Steam distillation works differently. The steam selectively extracts volatile aromatic compounds while leaving the heavier furocoumarins behind. The resulting oil has a slightly softer, more refined citrus character — and critically, it is not phototoxic. This makes steam-distilled lemon oil far more versatile for personal care applications.

The trade-off is yield. Cold-pressing extracts oil efficiently from citrus peels, while steam distillation yields less. But for the home distiller producing small batches of exceptional quality, this is a trade-off well worth making.

The Distillation Process

Place all your prepared lemon peel into the pot of your CopperHolic copper alembic still. Add 2.5 litres of distilled water. Here is an important extra step for citrus: let the peels soak in the water for a full hour before applying any heat. This soaking period softens the peel tissue and helps the oil glands begin to release their contents, improving your eventual yield.

After soaking, assemble the still and seal all joints carefully. Fill the condenser with ice and cold water. Place a narrow-neck glass collection vessel at the outlet.

Heat gradually to between 85 and 95 degrees Celsius. Citrus oils are particularly volatile, which is both an advantage and a caution — they release readily into the steam, but they can also be lost if your condenser is not cold enough. Keep that ice topped up throughout the run.

Maintain steady distillation for two hours. The citrus aroma in the distillate will be noticeable from the very first drops and will persist throughout the run, gradually softening as the peel gives up its oil.

Separation and Yield

After distillation, let your collected distillate sit undisturbed for thirty minutes. Lemon oil will float to the surface as a thin, pale yellow layer. It may be quite delicate — citrus yields from steam distillation are modest.

From the peel of twenty to twenty-five lemons, expect between two and four millilitres of essential oil, plus approximately 500 millilitres of lemon hydrosol. Use a glass pipette to carefully separate the oil layer and transfer it to a small amber glass bottle.

The lemon hydrosol is a beautiful product in its own right — a gently citrus-scented water that works wonderfully as a refreshing facial mist, a natural surface cleaner, or a bright addition to homemade cleaning sprays.

Uses for Steam-Distilled Lemon Oil

Your lemon oil is versatile and, thanks to the absence of furocoumarins, safer for a wider range of applications than cold-pressed alternatives:

  • Aromatherapy: Diffuse for an uplifting, energising atmosphere — wonderful for morning routines or workspaces
  • Natural cleaning: Lemon oil is a powerful degreaser and adds a fresh scent to homemade cleaning products
  • Skincare: Safely add to face oils and creams without phototoxicity concerns (always dilute properly)
  • Laundry: A few drops in the rinse cycle leave clothes with a subtle, clean freshness
  • Mood support: Lemon oil is one of the most studied essential oils for its positive effects on mood and mental clarity

A Note on Phototoxicity

To be completely clear: steam-distilled lemon essential oil is not phototoxic. The furocoumarins responsible for phototoxic reactions in cold-pressed citrus oils are not volatile enough to carry over in steam distillation. This is one of the genuine advantages of producing your own citrus oil through this method. However, always perform a skin patch test with any new essential oil, and dilute properly before topical application.

Storage

Citrus oils are among the more delicate essential oils when it comes to shelf life. Store your lemon oil in a sealed amber glass bottle, away from heat and light. Even properly stored, citrus oils have a shorter shelf life than many other essential oils — one to two years is typical. Once opened, use within twelve months for best quality.

Oxidised citrus oil develops an unpleasant, flat aroma and may become a skin irritant. If your oil smells off or has lost its brightness, it is time to distill a fresh batch.
