What a Copper Still Cannot Make (and What to Do Instead)

A copper still is a remarkable machine, and it cannot make everything. Most of the disappointment we ever hear about traces back to one of eight expectations no pot still can meet, so here is the complete honest list: what the machine cannot produce, why the physics says no, and what to make instead. Selling you a still under false pretenses costs us a return and you a season, and neither of us wants that trade.
TL;DR
- Cannot make: flower absolutes, cold-pressed citrus, CO2 extracts, carrier oils, resinoids, 96% neutral spirit, fuel-grade ethanol, or oil from plants that have none.
- The rule underneath: a still only moves what evaporates. If it does not ride steam, it stays in the pot.
- Also not distillation: tinctures, extracts, and infusions are macerations. The still supports them; it does not produce them.
The eight honest limits
1. Flower absolutes
Jasmine, tuberose, mimosa, osmanthus, and linden give their true perfume only to solvent extraction or enfleurage, because their molecules are too scarce and too heat-fragile for steam. 2. Cold-pressed citrus oil
Commercial lemon, sweet orange, and grapefruit oils are squeezed mechanically from fresh peel, not distilled. A still makes a different citrus product: steam-distilled peel oil, which is furocoumarin-free and skin-safer, as our lemon extraction guide explains. Different product, honest trade-offs, both legitimate.
3. CO2 extracts
Supercritical CO2 equipment runs at pressures no kitchen will ever see. If a label says CO2 extract, no still made it. The distilled version of the same plant is usually available and usually what you want anyway.
4. Carrier and fixed oils
Jojoba, almond, argan, coconut, olive, rosehip: these are pressed fats, not volatile oils. They cannot evaporate, so they cannot distill. You buy carriers; you distill the aromatics you blend into them.
5. Resinoids and concretes
Benzoin resinoid and labdanum resinoid are solvent products. What a still does make from resins is essential oil, and generously: see frankincense, which yields 3 to 10 percent through a patient hydro-distillation.
6. Neutral 96 percent spirit
A pot still is a one-plate machine: roughly 40 to 65 percent alcohol on a first pass, 70 to 85 on a second, about 90 at best on a third. True neutral spirit needs a reflux column with many plates. This is not a defect. Character survives one plate; column spirit is engineered to have none.
7. Fuel-grade ethanol
Engines want near-anhydrous ethanol, which needs a column plus molecular sieves. A pot still cannot cross the 95.6 percent azeotrope, chemistry's hard wall, no matter how many passes you run.
8. Oil from plants that never had any
Cucumber, aloe, watermelon, banana: almost no volatile fraction exists in them, so no run length produces oil. Most "cucumber hydrosols" on the market are scented water, and we would rather tell you that than sell you the fantasy. A still cannot extract what is not there.
The maceration clarification
Tinctures, vanilla extract, infused oils, and most liqueurs are made by soaking, not distilling. Where the still earns its place in that work is recovery: it reclaims the alcohol from spent maceration material so you can use it again, which for busy tincture-makers pays for the machine faster than any product does.

Why do you publish your own machine's limits?
Because the returns we prevent and the trust we keep are worth more than the sales we lose. A buyer who wants jasmine absolute needs a solvent rig, not our still, and telling them so is simply correct.
Is there any workaround for the absolute problem?

What is the most common wrong expectation you see?
